The Apple Tart recipe

The Apple Tart is a classic cake, easy to prepare, that requires a few simple ingredients.

200 g superfine wheat flour ("00" type)
150 g butter, diced and refrigerated
70 g icing sugar
1 whole egg and 2 egg yolks
1 pinch of salt
1 lemon
450 g Golden apples
150 g apricot jam

First of all prepare the short crust pastry. Blend together the flour, the salt and the butter, to obtain a mealy mix. Then add the zest of the lemon, the icing sugar, the whole eggs and the yolks, and mix until the dough is firm. Wrap it in cling film and let it rest in the refrigerator for about an hour.
In the meanwhile prepare the filling: peel the apples, cut them into thin slices and spray some lemon juice to avoid browning.
As soon as the pastry is ready, roll it out with a rolling pin and lay it on a baking pan previously greased and floured. Spread part of the apricot jam and distribute the apple slices on the pastry, then brush the remaining jam warmed in a pan.
Use the remaining pastry to create strips to be places over the apple slices, then brush them with a mixture of milk and eggs.
Put in pre-heated oven at 180 °C and bake for at least 30 minutes.
